Our Story
Born and raised in the heart of New Orleans, Chef Jones grew up surrounded by the aromas of gumbo simmering on the stove, jambalaya bubbling in cast-iron pots, and pralines cooling on the counter. Cooking wasn’t just a skill in his family—it was a tradition passed down through generations. His grandmother’s kitchen was the soul of the household, where recipes were shared like stories, and every meal carried the rhythm of the city’s culture.
When Hurricane Katrina struck, it was more than a test of survival—it was a turning point. The devastation reshaped his perspective, deepening his resolve to preserve and share the culinary heritage of his city. Out of hardship grew persistence: a determination to infuse every dish, no matter the cuisine, with a New Orleans flare that honored his roots.
With over 25 years of culinary experience, he honed his craft in the kitchens of major corporations, mastering large-scale food service operations while never losing sight of the soulful flavors of his hometown. For two decades, he worked tirelessly in the corporate food world, learning discipline, efficiency, and the art of feeding thousands. Yet, his heart always pulled him back to the bold spices and soulful dishes of New Orleans.
Five years ago, he took a leap of faith, leaving behind the corporate kitchens to open his own catering company. Now based in Saint Paul, Minnesota, he brings the warmth and vibrancy of New Orleans to the Midwest. Whether it’s a wedding, corporate event, or intimate gathering, his menus are a celebration of resilience, culture, and flavor.
